Origins & Royal Kitchens

Originally, Laal Maas was a camp dish prepared after a royal Shikar (hunt). The game meat (often wild boar or deer) had a gamey odor that needed to be masked by strong spices. The limited availability of water and vegetables in the desert/hunting camps led to the use of yogurt and excessive chilies.
